We consider these wines to be peerless and it seems inconceivable that we would ever look for Chinon from any other producer. The intensity of the man and his biodynamic principals are reflected measure for measure in the wines, and we can’t imagine you being any less impressed than we are.
What we find so impressive is the way that Pascal masters oak. He is able to play with new oak and blend to make wines that have great structure and finesse. He works in a way that is almost Rhône-like.
Les Terrasses is, if you like, ‘entry level’ but has the same energy and fruit-forward personality that you will find across the range. Les Perruches has amazing grain and texture and its great structure makes it, perhaps, the favourite. Cuvée Marie and Harmonie are the ‘big boys’ and will age maybe fifteen years.
The perfect Chinon, lively, crunchy and vibrant. Amazing energy.
Our favourite wine from Pascal, wonderful silky tannins, texture and grain.
Opulent and rich, think Northern Rhone.
Just hitting maturity now, very satisfying full bodied, Bordeaux Right Bank like.
White Chinon is not well known, the same reason Red Sancerre isn't. It is usually average. Welcome Chinon Blanc from Pascal, a three dimensional, rich, food white
Our favorite Chinon from Pascal. Generous fruit on the nose, lots of minerality reflecting the stones in the soil. Wonderfully silky tannins, texture and grain giving a fresh finish.
Another Cuvée/daughter from Pascal this one from clay limestone soils (millarge and truffeau) vines aged 10-20 years, 85% are in Chinon and 15% on Cravant. Maceration of the harvest 30 to 40 days with a 12-month aging in oak barrels of 500 liters which 1/3 is new, followed by a flock of 5 to 6 months in tank.
Another Cuvée from the legendary Pascal. Made from vines of clay-limestone of a single plot in Chinon. This wine gives intense aromas of ripe red fruits and great elegance. Aged in 600 litre barrel for 24 months.
