Le Jonc Blanc, Isabelle & Franck Pascal

Isabelle and Pascal, 'paysans-vignerons', left Paris in 1999 and made their first vintage in 2000. Pascal was selling chemicals until then? they decided to change their life and are adamant they found a gem in Le Jonc-Blanc vines and soils. Nettle infusions and clay are used for treatments on the vines (as well as what is allowed in organic winemaking). The yields are confidential and the unfiltered wines spend two winters in the cellars for stabilization before bottling. This gives intense wines with a very ripe fruit.

Acacia 2008 /2009, 75cl

Made from ancient Sauvignon Blancs vines as well as some Sémillon and Muscadelle, all planted on the same plot. The yields are silly: 12 HL/ha, the fermentation and ageing take place in barrels without any sulfur.
