Vinci, Emmanuelle Vinci & Olivier Varichon

In 2000, Emmanuelle & Olivier purchased 7ha of vines spread throughout the heart of the Agly Valley. The isolated location of the vines between forest and steep rocky hills allows them to work in 'partnership' with the surrounding countryside. Emmanuelle and Olivier don?t use chemical fertilizers, weed killers, pesticides or any other synthetic molecule based product. Weeding is done manually and pruning is adapted to each individual vine tree. Their main focus is to help the vines to find their own balance between what they produce and the ground supporting them. Harvest takes place in the morning only, in small crates. Grapes are handpicked when they reach their utmost gustatory and phenolic maturity.
Domaine des Demoiselles, Isabelle Raoux & Didier Van Ooteghem

South of the medieval town of Perpignan is Tresserre where Domaine des Demoiselles is situated. It's one of these villages which seem to have sprung forth from a vineyard. Didier works in phytotherapy in the vines, Isabelle is in charge of the cellar and winemaking. Phytotherapy could be described as homeopathy applied to plants, an extreme form of organic winemaking. <br />
